WHAT DOES ETHIOPIAN COFFEE TASTE LIKE?

Ethiopian coffee is famous for its lively fruity and floral notes, making it a favourite among coffee enthusiasts. Its flavour profile is known to be complex and nuanced, with a light to medium body and a hint of acidity that adds depth to the taste. 

The processing technique used in creating Ethiopian coffee plays an important role in determining the final flavour of the brew. 

From bean selection to roasting techniques, every step influences how your cup of Ethiopian coffee will taste – whether you’re savouring it on its own or mixing it with milk or other drinks to create unique blends.

 

WHAT IS TRADITIONAL ETHIOPIAN COFFEE?

Coffee is so much more than a simple beverage in Ethiopia. It’s an integral part of their rich culture and customs, bringing people together in a communal gathering that signifies the importance of socializing and sharing experiences. 

The traditional Ethiopian coffee ceremony involves roasting raw coffee beans over open flames to get just the right flavour, then grinding them into a paste before brewing them in an authentic clay pot called a djebena. 

The hour-long ceremony includes serving guests with delicious Ethiopian pancakes, stews, and dhal alongside steaming cups of fragrant coffee as they sit down to enjoy each other’s company. This special ritual has been passed down from generation to generation and remains an essential aspect of community life today, connecting neighbours, family members or relatives through shared traditions surrounding good food and great conversation.

 

WHAT IS AN ETHIOPIAN COFFEE CEREMONY?

In many households, the honor of conducting the coffee ceremony is given to either the woman of the house or a younger female member. This revered ritual is performed up to three times a day, during which time anywhere from 6 to 9 hours can be dedicated solely to preparing and serving coffee.

It’s important to note that this dedication reflects not only the cultural significance placed on this beverage but also serves as an opportunity for connection and community-building within Ethiopian culture.

The ritual commences with the scattering of fragrant grass and flowers on the ground, followed by burning incense to dispel any malevolent spirits. Next, a round-bottomed jebena – a traditional black clay coffee pot – is placed over hot coals and filled with water. These steps set the stage for an authentic coffee brewing experience that has been passed down through generations in many cultures around the world.

After selecting the freshest green coffee beans, they undergo a cleaning process before being roasted. The beans are gently heated in a pan over hot coals or a small fire and carefully stirred to remove any unwanted husks and ensure their cleanliness. This crucial step helps to guarantee that every bean will be roasted evenly, resulting in a perfectly balanced cup of coffee with maximum flavour potential.

As you watch, the freshly cleaned beans are carefully placed into a roasting machine and begin their transformation. The process is meticulous – the beans must be constantly stirred or shaken to ensure that they are evenly roasted.

For the freshest coffee, the hostess will use a traditional tool for grinding freshly roasted beans. This tool is similar to a mortar and pestle, but with its own unique name: “mukecha” for the heavy wooden bowl and “zenezena” for the wooden or metal cylinder with a blunt end. Together, they are used to crush the beans into coarse-ground coffee that is ready to be brewed. Using this traditional method not only produces delicious coffee but also honours cultural traditions.

When ready, the hostess presents her guests with handless ceramic or glass cups positioned close together. The coffee is then poured into each cup at once from about a foot above to prevent any stray grounds from finding their way into the brew. Ethiopian tradition dictates that when serving this drink, respect for elders takes precedence over everything else.

Typically, you can expect Ethiopian coffee to have an average caffeine level of 1.1%, which is comparable with other beans commonly used for brewing a hot cup of joe. So next time you savor that delicious Ethiopian blend, don’t be surprised if your energy boost is more subtle than expected.
